This weekend we had our family photos done at a Christmas tree farm and they were fantastic. I haven’t seen any sneaks, but I just know they are fantastic. The location was ideal even for my Florida family. Thankfully there was a breeze that struck us while taking photos making it feel a bit more fall-ish in the sunshine state.
Christmas photos have gotten me even more in the holiday spirit so I came home and whipped up a batch of rice krisipies…. not traditional rice krispies of course. Pumpkin pie spice rice krispies with coffee creamer is my new jam. Oh. My. Yum. The flavors of pumpkin pop and they are hands down the best rice krispies I’ve had. I keep a healthy stock of International Delight coffee creamer on hand and during the seasonal months I double up on my stock. Being that I had ample stock of the best creamer ever I decided to add a touch to my dessert recipes this year and I’ve yet to be disappointed with this decision, friends.

6 cups of rice krispies
2 tbsp butter
1/4 cup of can pumpkin
1 tbsp pumpkin pie spice coffee creamer
1 tsp pumpkin pie spice
1 tsp nutmeg
1 regular size bag of mini marshmallows
Melt butter and coffee creamer in a large pan
Add in pumpkin and spices (pumpkin pie spice and nutmeg)
Stir in marshmallows until melted
Add in cereal and remove from heat
Fold cereal until it is well coated
Pour into a baking pan or serving pan
Allow the mixture to set and serve
*These rice krisipes are more on the sticky side which I preferred. If you prefer a harder less sticky treat reduce the amount of pumpkin puree added in.
