I’m going to hit you a little heavy today with some Mother’s Day reminiscing. Sometimes a little heavy chit chat is good for the soul and it’s a tad refreshing. With Mother’s Day approaching I thought a blog post with some focus on Mom was necessary. Who doesn’t love to chat about how amazing their loved ones are?
This Mother’s Day I celebrate year two of motherhood and my mother celebrates year 32 of motherhood. Becoming a mother has brought us closer than ever. When you have child a special light shines on your own mother that seems to be impossible to see pre-motherhood. This Mother’s Day I’ll be doing a fair share of reminiscing my childhood, my teenage years when things got rocky, my growth into adulthood and then of course my journey to motherhood. Through all of these stages my constant was and is my Mother.

After all that sweet chat, it’s time for a sweet recipe to share with Mom!
You might be thinking, how does talking about mom roll into a recipe? Childhood without Cheerios™, I don’t believe a thing exists. I love how certain foods can bring back a flood of memories and bring a smile to your face. I’m certain my mom was giving me cereal far before I can recall. Our household ran on cereal and we often had it for dinner. This Mother’s Day I’m gifting a box to my mother, my favorite lady. The “Buy a Box/Give a Box” is a simple way to give Mom a little item that brings back childhood memories; it’s sure to put a smile on her face.
My Mom is going to love these! The roasted bars are so fun and the perfect little sweet treat anytime of day. I would serve these bites at brunch, bring them to the park, have a few bites as my afternoon snack or even break off a few pieces post dinner. These roasted bars remind me of the roasted nuts you can get at theme parks. Theme parks- there’s another slew of childhood memories. They’re crunchy, sweet and they break apart easily; you could even serve these alone instead of making them into bars. Loose crunchy bites- yum! I like a recipe that gives variety when it comes to serving and enjoying.
Ingredients:
1/2 stick of butter, 4 tbsp confectioners sugar, 6 cups of Cheerios™ (I used Honey Nut Cheerios™ for this recipe) and 2-4 tbsp of peanut butter.
Combine butter, sugar and cereal.
Place mixture on baking dish and bake at 350 for 10 minutes.
Remove from oven, allow it to cool.
Mix in peanut butter and place in baking dish or storage container of choice.
Place in the refrigerator for a few hours or overnight.
Remove and cut out bars and snack whenever you like!

It’s amazing how your perspective of your own mother changes once you become a parent! I grew up enjoying Honey Nut Cheerios and to this day they are my favorite. I would give a box to my brother. He was always my partner in crime growing up but now lives on the opposite side of the country. I think it would be a fun surprise! (client)
