The Holidays are over, but winter weather is in full force. Here in sunny Florida, we don’t feel any dose of winter until January and February, and us Floridians take cold fronts very seriously. If it’s under 50 degrees we are frozen and indoors. Try to refrain from laughing too hard. wink!
Regardless of your location, winter months call for a tad bit of hibernation with TV shows and warm snacks. You can find me on the couch bundled in a throw watching “Arrow”, “The Goldbergs” and I might even rewatch a few episodes from my favorite show, “The Black List”.

Seriously, you’ll thank me for this very simple and delicious recipe. I suspect you’ll make it a few times before winter ends. Simple, warm and oh so good!
1 can of RO*TEL
3 packs of mini phyllo cups
2 cups of colby shredded cheese
1 cup of bacon bits
1 tbsp of mayo
Drain RO*TEL, leaving just a touch of liquid, and pour into a small mixing bowl.
Combine cheese, bacon bites and mayo.
Scoop into mini phyllo cups
Bake at 350 for 10 minutes
Snack away!

How long do you cook cups in the oven before filling?

All the cups come packaged in the same quantity (20). Per the directions fill the cups then bake them. 🙂 Happy baking!
Thanks for posting this Melissa, I’ve eaten ConAgra products all of my life (I’m 78) we had Wolf brand chili in my childhood only back in my Jr. high school years it had real chunks of meat in it then, not ground beef…beef was a lot cheaper then. This sounds delicious! I use Ro_Tel Original frequently and am never without it especially for ranch chicken and my restaurant style salsa…being a DP Texan, I love anything spicy.

Where should I look for the mini phyllo cups? Would they be in the frozen baked goods section of the super market or in the bread/cookie/cracker aisle? Perhaps I can order them online? I can’t remember ever having seen them in the market I frequent.
