My little family soaked up a fun filled (and delicious food filled) weekend. We took our holiday photos, enjoyed a family style brunch with the parents, the husband and I had a fancy dinner in honor of our upcoming wedding anniversary and we wrapped up the weekend trying out a new fall inspired recipe- cinnamon struesel apple cake pie. It’s cake, it’s pie, it’s fall flavored awesomeness. Grab all the details below!
I’ve had the urge to whip up a pie from scratch recently, but with daily duties and a 7 month old at home time isn’t always on my side. During my most recent Big Lots visit I spotted cinnamon streusel cake and pie filling and boom, a cake pie was born! I knew the 2 items would go hand in hand and fill the ‘I really want to make a pie’ void.

Cinnamon Streusel Apple Cake Pie
1 box of cinnamon swirl crumb cake
1 cup of apple pie filling
2/3 cup of water
You can find a great variety of baking supply items at the Big Lots baking center display. I was immediately drawn to the baking center and several items found their way to my cart. wink.
Heat oven to 350 and grease pie pan
Stir together water, egg and cake mix
Pour half of the batter into a pie dish
Add 1 cup of apple pie filling on top of the batter
Sprinkle half of the topping over the batter and pie filling
Drop the remaining batter in spoonfuls over the pie filling and batter
Sprinkle the remaining topping
Bake for 40 minutes
Cool, serve and enjoy with coffee
